    Carboxymethyl cellulose (CMC)


    Carboxymethyl cellulose, CMC, purified sodium CMC - as soon as this substance is not called. Today it is one of the most popular and affordable thickeners widely used in the food and confectionery industries. This component is also found on food packaging under the standard abbreviation E466.


    E466 additive: what is it and how is it synthesized?


    E466 is obtained by hydration reaction cellulose, that is, conversion into a water-soluble state. This state of cellulose is achieved due to the introduction of carboxymethyl groups into its structure.


    But only the hydration reaction of cellulose is not enough to obtain a food additive. So what is E466 made of? This substance is synthesized as a result of the reaction of interaction of cellulose with monochloroacetic acid and sodium hydroxide. Cellulose is carefully selected, monitoring its quality, because the safety of using the food additive in finished form directly depends on this.


    The process of obtaining component E466 takes place in 2 stages:




    • First, alkaline cellulose is obtained - for this it is simply treated with sodium hydroxide. This process in the scientific community is called mercerization.

    • Ready alkaline cellulose reacts with monochloroacetic acid.




    As a result, the final product is obtained, in the composition of which up to 30% are by-components in the form of glycolate and sodium chloride. The carboxymethyl cellulose is then thoroughly cleaned of impurities and washed to achieve a purity level of 99.9%.     Carboxymethylcellulose: properties of a food additive


    Outwardly, this component looks like a fibrous powder or small granules of white or beige tint. This additive is highly soluble in hot and cold water, alkalis. CMC dissolves slightly worse in acids and glycerols. This additive is not soluble in mineral oils and organic liquids.


    Interestingly, the rate of dissolution of CMC particles increases as the water temperature rises. Remarkably, dissolved carboxymethyl cellulose does not have a pronounced taste and aroma.


    Visually, an aqueous solution of CMC looks like a sticky, viscous liquid. And the degree of its viscosity depends on the concentration of carboxyl groups in the finished product. If the carboxyl groups in CMC contain from 0.65 to 0.95 units, then the output will be a product with medium and high viscosity.


    Carboxymethyl cellulose is a food additive with unique physical properties. A particularly useful property of CMC is considered to be its ability to enhance the viscosity of aqueous solutions. When working with it, it is worth observing the main principle - ensuring uniform and rapid wetting of the entire volume of the substance before its viscosity begins to increase.


    Carboxymethyl cellulose can be bought in Ukraine with both low and high molecular weight. With their help, it is easy to independently prepare solutions of the desired viscosity.


    CMC is used in the process of making food due to its properties such as:

    Cellulose gum is used to make food glue, with the help of which confectioners fasten together parts of finished mastic products or attach them to the surface of the cakes. Important: the food additive CMC has a whitening effect, this should be taken into account when changing its natural color using dyes. If you need to paint the mastic in a bright color, its composition must certainly contain a large amount of CMC additive.


    The composition of confectionery mastic and the concentration of CMC in it directly depends on its purpose, it can be used for:

    CMC is added in the confectionery industry depending on the type of mastic to be made. For the production of edible flowers, the mastic should contain a large amount of E466 additive - it provides the most transparent rolling and the realism of the finished products. This type of mastic is not suitable for sculpting figures and other decorative elements - it is too elastic and soft.


    To make figures from mastic, it should contain less carboxymethyl cellulose. So you can, if necessary, smooth the surface of the product and not be afraid of cracks appearing on it.


    The mastic, which is used to cover the surface of the cakes, is much softer in texture - it does not hold its shape as much as the previous version mastics. It will not work to make decorative elements from it, since they lose their original shape even before they are completely dry. A larger amount of fat is added to such mastic to increase its elasticity and prevent drying out during the rolling process.


    To make different types of figurines for decorating confectionery, mastic is used, somewhat reminiscent of confectionery paste for making flower compositions. In its composition, it often contains cocoa butter or its substitute, as well as chocolate. It is thanks to these components that it becomes possible to sculpt complex characters.
