Sodium citrate (sodium citrate ) (E331) is used in the food industry as an acidity regulator, a complexing agent, a dispersing agent.
In the food industry, sodium citrate trisubstituted 2-water or 5.5-water is used. Recently, 2-water sodium citrate has become more and more popular, in which the content of the main substance is 1.214 times higher than that of 5.5-water and which has less hygroscopicity, practically not caking during storage.
It is a white crystalline powder, readily soluble in water, slightly soluble in alcohol. Not flammable, not explosive, non-toxic, non-irritating to the skin, however, if inhaled as dust, may irritate the upper respiratory tract. Sodium citrate is used in the production of marmalade, pastille, soufflé, concentrated and powdered milk, processed cheeses, yoghurts, soft drinks and baby food.
It is widely used in pharmaceuticals and medicine, in particular as a preservative for blood and other protein substances, is also used as a synergist for ascorbic acid. In dairy production, sodium citrate is used in the production of pasteurized and sterilized milk, fermented milk products, canned milk, where a more or less lengthy operation of heating milk is required.
