    Proportion for 5 kg of meat.

    For 2.5 liters of water, add 1 teaspoon of ground pepper, 2 teaspoons of marjoram, 2 bay leaves, 5 grains of allspice, 12 grains of juniper, a few cloves, a pinch of coriander and thyme (you can also use a ready-made mixture of herbs for salting). Boil the seasonings in water for 10 minutes. Add 10 g of potassium nitrate (1/2 pack), 20-40 g of salt to an already cold marinade, a teaspoon of sugar, mix thoroughly. While pricking the meat with a syringe with a 1 mm needle, inject about 100 ml of the marinade at regular intervals into the piece. Place the meat tightly in a stone or enamel saucepan and pour over the rest of the marinade (the meat must be completely covered). Salt for 7 - 9 days at a temperature of 4 - 8 degrees, turning the meat every 2 - 3 days.

    Salted meat can be boiled, smoked, baked or grilled.
