Food saltpeter for salting and smoking meat, (potassium nitrate KNO3, potassium nitrate, potassium nitrate).

Potassium nitrate for salting pork, beef and veal.

Proportion for 5 kg of meat.

For 2.5 liters of water, add 1 teaspoon of ground pepper, 2 teaspoons of marjoram, 2 bay leaves, 5 grains of allspice, 12 grains of juniper, a few cloves, a pinch of coriander and thyme (you can also use a ready-made mixture of herbs for salting). Boil the seasonings in water for 10 minutes. Add 10 g of potassium nitrate (1/2 pack), 20-40 g of salt to an already cold marinade, a teaspoon of sugar, mix thoroughly. While pricking the meat with a syringe with a 1 mm needle, inject about 100 ml of the marinade at regular intervals into the piece. Place the meat tightly in a stone or enamel saucepan and pour over the rest of the marinade (the meat must be completely covered). Salt for 7 - 9 days at a temperature of 4 - 8 degrees, turning the meat every 2 - 3 days.

Salted meat can be boiled, smoked, baked or grilled.

Composition: - Net weight: 20 g per 10 kg of meat,

    1. SPECIFICATION Food saltpeter for salting meat, (Potassium nitrate KNO3, potassium nitrate, potassium nitrate)

Potassium nitrate - potassium nitrate (KN03), colorless, crystalline salt (E 252), used for salting meat with traditional methods. Potassium nitrate (potassium nitrate) is (besides table salt) the most important additive used in salting meat, guaranteeing not only prolonging its suitability for consumption, but also preserving the pink color of the meat. The recipe for its use is on the packaging.

At the first stage of salting (after adding saltpeter, salt and spices, nitrate ions from nitrate under the action of natural enzymes contained in meat are reduced to nitrites (in an amount no more than the content of myoglobin).

In the second step, nitrite ions react with myoglobin, the protein responsible for the pink (but unstable) color of the meat. The reaction product is the strong nitrosomyoglobin with a persistent pink color, even at higher temperatures.

    - meat treated with nitrate is not covered with a slimy coating,

Why is it better to use nitrate than nitrite-containing products (for example, Peklosól)?

Use of nitrate Potassium containing only nitrate ions is the healthier and safer of the nitrite-based salting mixtures available on the market, which, in the case of even a slight overdose, can be harmful to our health.

In addition to nitrites, nitrosamines, compounds formed when meat is heated as a result of the reaction of nitrite with amines, are dangerous. These compounds can be carcinogenic.

Salting with potassium nitrate curing lasts two days longer, than nitrite, but it is definitely healthier and safer!

    GOST 19790-74

Potassium nitrate is a colorless to white crystalline powder, sometimes with a yellowish-grayish tint. It is widely used in agriculture and other industries: in metallurgy it is used for hardening metals; is a part of some pyrotechnic compositions and gunpowders; for lightening and discoloration of crystal glasses, as well as for strengthening glass products is used in the glass industry; for the production of thermosalts, enamels, heat carriers; is a valuable non-ballistic fertilizer containing two nutrients - nitrogen and potassium.

Potassium nitrate is highly soluble in water.

Potassium nitrate is packed in polypropylene bags with polyethylene liners.

Net weight of the product is 50 ± 1 kg.

Potassium nitrate must be transported by covered vehicles in compliance with all the rules for the carriage of goods by transported vehicles. Do not carry out loading, unloading, transportation and storage of nitrate together with combustible substances, potassium cyanide, mineral acids, thiocyanates. Also, no mixing with straw is allowed, p> It is readily soluble in water.

It is used in various sectors in industry and agriculture: as a component of some gun powders and pyrotechnic compositions; in glass industry for crystal glass decolorization and clarification, for glassware reinforcement; in production of enamels, thermal salts and heat-transfer agents; in metallurgy for metal hardening; as valuable undiluted fertilizer containing two nutrient elements - potassium and nitrogen.

Packing: PP bags with polyethelene liners.

    Product net weight: 25 ± 0 , 5 kg, 50 ± 1 kg

Transportation: by top-covered r / w cars, top-covered deck vessels and top-covered trucks according to cargo carriage regulations applicable to a particular transportation mode. Handling, Standard for grade C
