Tare gum is soluble in cold water, and such a solution reaches its highest viscosity at temperatures above 70?С. At a concentration of 2-3%, a thick pasty mass is formed.
Gum tara gives food systems a creamy structure. However, like guar gum and locust bean gum, it is sensitive to the acidity of the environment. In "cold" technological processes, problems usually do not arise, however, at high temperatures, the effect of being in the system is reduced. As well as guar when used in combination with other gums, in particular with xanthan, as well as with carrageenan, container gum exhibits a synergistic effect.
In the food industry, containers are mainly used as a thickener in the production of cheeses, ice cream, yoghurts, fillers, mayonnaise, ketchup, fruit drinks, confectionery and meat products.
